the technical transition of product development from bench top to commercial
production. Assist in the development of processing techniques so that new
products adapt to manufacturing feasibility. Specific
Responsibilities Include: Leads
in making adjustments to formula for product manufacturing at the pilot plant
level or initial production runs for achievement of all target objectives. Works
with vendors to find new and appropriate ingredients for new products and
product improvements. Researches recipe ideas using the Internet, trade
magazines, trade groups, research journals and industry network. Assists
in creation of new recipes for testing new product ideas. Assist with
creating bench top samples of new products according to cost and sensory
guidelines. Leads
sensory evaluation and testing of new products under development. Evaluates
product ingredients and formulation; develops suggestions for new products or
improvements to existing products. Supervises test runs of new/changed
products and evaluates quality, presentation and taste. Review
recipes to comply with weights and measures analysis for manufacturing and
assists with product pricing. Leads
cuttings in lab to test new and improved products in comparison with
competitor products and supervises R&D projects such as shelf-life
studies. REQUIREMENTS
Food
Science degree, or certifications/degrees associated with Culinary Arts or
Food Development. Minimum
5 years experience in corporate and/or food manufacturing environment. |
