TITLE: Sr. Food Technologist, Food Service
EDUCATION: BS/MS Food, Meat Science (Advanced degree is preferred)
X-FACTOR: BS/MS with 5+ years of relevant food industry/ academia experience- new product development, quality improvements of existing products, cost optimization and technical product support. Must be able to travel up to 25% and work in a food plant environment.
DUTIES: THIS POSITION IS IN THE RETAIL GROUP- OPERATES INDEPENDENTLY
POSITION SUMMARY: Responsible for the development of foodservice food products in support of Perdue Farms business needs. Independently plans and conducts multiple project assignments. Project scope to include: 1) New products, 2) Quality improvements of existing products 3) Cost optimization of existing products and 4) Technical product support, i.e. USDA/government compliance.
ACCOUNTABILITIES: • Promotes applicable safety, regulatory, GMP requirements in lab, pilot plant, and manufacturing facilities. Assists in writing of new policy/ procedures as needed. • Execute product development projects to grow top line volume in support of new product development as a % of revenue goals. Conducts and leads required lab/ pilot plant/ plant experimentation. • Expert in Foodservice product development process including: ingredients, food processes, sensory testing, customer and consumer testing, NPD Stage Gate process, costing, plant trials commercialization, and related process. • Documents all development work accurately. This includes written documentation of lab work, product showings, and plant trials. • Prepares accurate and timely specification for all products developed. This includes: raw ingredients, formula, process, finished product. • The technical customer/consumer expert for assigned products and channels. Understands who the customer/ consumer is, why and how they use our products. • Interacts cross-functionally with Marketing, Purchasing, QA, and Operations to successfully implement new product developments. • Leads product showings to evaluate products developed and competition. • Mentors junior technical personnel. • Significant foodservice customer interaction.
KNOWLEDGE AND SKILLS: Expert knowledge of the product development process from idea generation, bench top, scale up and commercialization. Ability to influence necessary cross functional partners for successful implementation of projects. Clear written and verbal communication skills. Knowledge of ingredients including functionality, allergen considerations, and cost. Understanding of food manufacturing processes and the sequence of events necessary to convert raw materials to finished products. Expert in poultry processing and/or related food product systems. Must have extensive turkey product development expertise.
