? Job Title: Technologist / Microbiologist ? Department: Fermented Ingredients R&D
? Location: Beloit, WI ? Reporting To: Vivien Sheehan
Position Objective and Overview of Role:
The technologist / microbiologist will interface with the relevant market directors to bring new or improved fermented food ingredients and processes to the fermented ingredients portfolio. This will be achieved through bench top microbiology, pilot scale-up and factory trials involving liquid frozen cultures, freeze dried cultures and spray dried multi-functional fermented metabolites. The candidate will lead and participate on proactive and reactive fermented ingredient projects, coordinate new product introductions / process changes, lead and participate on interdepartmental teams, operate and lead in pilot equipment operation and focus on process improvement initiatives. The candidate will manage shelf life studies to validate the efficacy of Kerry’s ingredients in different food applications. Accurately interpret test results and present data in a clear and concise manner.

? Improvements — of yields, throughput, functionality and efficiencies on existing products and processes

Qualifications / Experience:
? Qualifications: B.S. with 2-3 years experience or M.S. in Microbiology, Food Science, Microbial Physiology, Bioprocess Engineering, Biochemistry, Biology or other related fields.
? Competent in bench top microbiology, aseptic technique, plating, transfer, culture maintenance & storage, experience in media making, media optimization, fermentation knowledge, familiarization with food plant GMP & HACCP.
? Experience or exposure to food fermentation pilot or production equipment/activities (fermentors, spray dryers, freeze dryers, dairy/meat equipment, centrifugation, filtration, pelletizing, evaporation, sterilization, pasteurization).
? Competent knowledge in bacterial metabolism and metabolites, microbial physiology, media optimisation, GRAS organisms and lactic acid bacteria, bacterial inhibitors, bacteriocins, polysaccharide production and probiotics.
? Familiar with experimental design, standard laboratory data logging and reporting.
