Manage and coordinate supplier and distributor Quality Assurance programs for
assigned products and suppliers. May also have restaurant brand
responsibility, depending on candidate.
Key Performance Elements/Essential Functions
· Inspect, audit and
approve supplier facilities and systems including manufacturing, storage and
distribution sites and equipment for assigned products. Thoroughly
inspect production processes, adherence to GMP guidelines and Brinker product
specifications and standards.
Based on inspections, outrun reports, monitoring and other materials,
identify and/or make recommendations for continuation or change in supplier
programs to ensure continued improvement and approval status for assigned
suppliers and products.
Design, implement and manage the product assessment process for assigned
products to ensure that all products are routinely assessed for the physical,
chemical, organoleptic and/or microbiological
analyses per specified parameters and frequenciesEnsure
that all suppliers and distributors have annual third party sanitation
facility audits, recall programs and all relevant food safety and product
quality programs
· Develop, implement and
maintain the product recall program for assigned suppliers. Conduct
mock recalls on a scheduled basis with all Brinker restaurants.
Ensure that all new products, procedures, equipment and/or supplies meet
appropriate food safety and quality criteria
Ensure the development, and documentation is completed for the comprehensive
specifications for all assigned products.
Develop suitable evaluation parameters and criteria, microbiological and
chemical, for all assigned products.
· Identify, develop, and
implement product related quality, food safety and training needs with
assigned suppliers.
Coordinate/help resolve product-related problems with
suppliers/distributors/restaurants.
Develop and maintain good supplier/distributor relationships towards
improving quality standards.
Manage outside services to inspect Brinker suppliers for compliance to brand
and regulatory food safety requirements and use information to determine
specific focus for improvements
Develop and/or participate in programs with FDA, USDA, state and local Health
Departments to allow Brinker brands to better meet regulatory food safety
requirements.
Ensure that new products, procedures, equipment and/or supplies meet
appropriate food safety and quality criteria.
Manage Total Quality Assurance Program including safe food handling practices
at restaurants and supplier quality assurance responsibilities including
Development of Product Specifications, Performing Manufacturing Audits,
Development of Process Programs/Controls, Resolving Hotline Calls, Resolving
Product Issues, Approving Potential Suppliers, Ensuring Supplier Compliance
to Brinker requirements, and Performing Product Assessments,
Liase with Brand Restaurant Operations and manage
communications between Operations and Quality Assurance.
Education/Training:
4 year college degree or equivalent in Food Science, Meat Science, Biology or
other science equivalent.
Requires both Food Safety Manager Basic and Trainer Certification eligibility
and/or attendance in progress.
Certified Food Safety Professional recommended.
Registered Environmental Health Specialist preferred.
Experience:
5+ years Quality Control/Quality Assurance experience within a multi-unit
food service organization, or in a food manufacturing capacity, is required.
Previous supervisory experience preferred.
Strong food service background required, preferably with a casual dining
restaurant chain a plus.
General Knowledge/Skills/Abilities:
Budget/Cost Control- general understanding of QA/procurement budgeting and
cost control functions, with ability to perform complex budgeting/cost
control processes.
Presentation Skills- ability to make clear, concise and convincing business
presentations that will have high level impact with executive and senior
level management.
Analytical- ability to independently perform complex analysis of supplier
performance and/or brand needs.
Communication Skills- excellent verbal and written communication skills,
including technical writing.
Organizational Skills- excellent people skills and good organizational
skills.
Judgment/Decision Making- basic ability to make appropriate business judgment
and recommendations independent of supervisor.
Problem Solving- basic ability to work through problems without supervisor
input.
Computer Skills- working knowledge of Microsoft based software, including
Excel, Word, etc.
Other- ability to elicit internal and external support; good interpersonal
skills; ability to work under pressure and short time lines, prioritizing
multiple projects with various deadlines simultaneously, as well as attention
to detail with accuracy.
Special Technical Skills- must possess special technical knowledge and
skills as detailed in job description.
Position Specific Experience/Knowledge/Skills/Abilities
Ability to supervise individuals to manage a Total Quality Assurance Program
General knowledge regarding food safety, HACCP and federal, state and local
regulations governing food products and restaurants is required.
Solid understanding of restaurant operations, and
procedures is a plus.
