Description:
Research areas are: proteins, nutraceuticals, phenolics – antioxidants
and antimicrobials.
This person will serve as project leader and cooperate with Dr.
Hettiarachchy in protein chemistry, phenolics and value-added uses.
Experiments include protein extraction, modification, functionality,
value-added co-products, scale up and applications using electrophoresis
column chromatography, HPLC, GCMS, DSC, ultrafiltration, centrifugation,
spray drying, freeze drying, amino acid analysis and other analytical
procedures. The successful candidate will demonstrate initiative and be
responsible for setting up and operating other analytical equipment,
conducting experiments, training undergraduate/ graduate students with
techniques, writing manuscripts, grant proposals, reports and making
presentations. This person will assist in teaching food product
development and nutraceuticals and functional foods labs, as needed.
Initial appointment is for one year, and continuation of position is
contingent upon availability of subsequent funding and job performance.
Minimum Requirements:
Ph.D. degree in Food Science, Chemistry, Biochemistry or closely related
science with hands-on experience in protein chemistry, functionality and
functionality enhancement, Phenolics extraction and testing extracts for
antimicrobial and antioxidants, HPLC, GCMS, column chromatography,
ultrafiltration, biotechnology – fermentation, scaling process and
product application. Must be able to work as a team member and
independently on assigned tasks with minimum supervision. Excellent
interpersonal, oral and written communications skills required.
Applicants must have fluent English communication skills.
Preferred Qualifications:
Experience in conducting research with alternate crops preferred.
Industry experience will be a plus.
