REPORTS TO: Sr. Director of Risk Management DEPARTMENT: Risk Management

STATUS CLASSIFICATION: Exempt

SUPERVISES: This position has no formal supervisory responsibilities.

Job Purpose: Assure the safety and quality of all food products used by Buffalo Wild Wings, Inc. Maintain compliance with all regulatory mandates for food service operations.


Responsibilities Include:

I. Product Integrity – Quality and Safety

o Work with suppliers, distributors, purchasing, research & development and others to develop, document and update detailed specifications for all Buffalo Wild Wings, Inc. food products based on culinary requirements, quality standards and food safety.
o Validate and document performance characteristics and acceptable variation allowances to assure products meet performance objectives.
o Develop and manage evaluation processes to assure performance criteria are achieved.
o Assure that products meet performance standards through documentation of specifications, scheduled testing of products and feedback from other departments.
o Investigate out of compliance products and make recommendations for resolution.
o Initiate and coordinate product holds as required.
o Audit suppliers’ adherence to the product specifications and performance expectations with the goal to improve performance by reducing product defects, recalls and other failures.
o Establish reliable product identification and traceability systems.
o Resolve product problems by coordinating resolutions with suppliers, distributors, purchasing and operations.
o Manage product recalls.
o Develop and document supplier standards for food quality and safety.
o Implement and maintain a certification process that monitors supplier compliance with food quality/safety standards and regulations.
o Evaluate the quality assurance programs and procedures of potential suppliers for secondary product sourcing.
o Conduct periodic onsite inspections of supplier facilities.
o Work with Research & Development to integrate food safety principals into new recipes.
o Evaluate, test and recommend new technology or equipment that enhances food safety.
o Monitor food product related guest injuries.
o Handle food quality/safety related “Guest Comments” communications

II. Regulatory Compliance

o Ensure compliance with all regulatory mandates for food service operations.

III. Other Risk Management Functions.

o Participate in safety training and education programs for restaurant managers as needed.
o Perform other related duties, tasks and projects as assigned by the Sr. Director of Risk Management.

Education/Training/Experience:

This position requires a Bachelor’s Degree in Food Science, Meat Science or other equivalent science degree. 7+ years food quality assurance experience with essential working knowledge of food safety and quality: including microbiological, chemical, sensory, and physical analysis of products and in-depth knowledge of food processing and food & packaging products. Food service background managing multiple products preferably with a casual dinning restaurant chain.

Physical Demands:

The physical demands for this position are sits, stands, bends, lifts, and moves intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.
