Manage and maintain the restaurant Food Safety and Quality Assurance processes for PFCB. Coordinate and sustain the restaurant food safety audit process, and be accountable for upkeeping PFCB restaurant scorecarding. Acts as the primary nutritional resource for all PFCB concepts and to monitor and continuously improve nutritional/food labeling regulatory compliance systems. Additionally, will conduct random quality product evaluations to ensure that all food ingredients meet PFCB standards of excellence against specification requirements.

Principal Duties & Responsibilities:

• Responsible for managing and maintaining PFCB Restaurant Food Safety Audit Program Databases, and for continuous updates and reporting for all restaurant QA activities, including regulatory.

• Responsible for managing and maintaining PFCB Nutritional Genesis Database for all PFCB concepts.

• Provide the guidance and assistance to PFCB restaurants to meet food safety regulations and eliminate/minimize potential food safety risks.

• Partner with Legal to research, maintain, and keep abreast with up-to-date knowledge in emerging labeling/regulatory issues that may affect the PFCB brand.

• Interfaces and communicates nutritional/label issues with all levels within the PFCB Organization.

• Obtain and verify nutritional/ingredient information from PFCB Vendors.

• Ensures existing food ingredients adhere to outlined specification through periodic quality checks.

• Perform restaurant food safety audits as needed.

• Assist the QA/Supply Chain Team with product withdrawals/recalls.

• Supports Customer Service and other departments with any technical, quality, public health, or food safety issues and questions.


• Bachelor’s degree in Environmental Health, Food Science and Nutrition, or equivalent.

• 3 - 5 years food industry operations experience, preferably within a multi-unit chain/restaurant or Environmental Health.

• Understanding of regulatory requirements within the food industry including labeling GMP, HACCP, SSOP and all other pertinent USDA and FDA requirements

• Prior work experience in the Food industry, a strong emphasis in Quality Assurance, restaurant food safety, nutritional labeling, and auditing skills, preferred.
