Development Department: General Mills, Inc. has
an opportunity for a Research & Development Scientist at our locations in
Minneapolis, Minnesota. Job Description: The primary duty of the Research
& Development Scientist position is to work in a hands-on environment and
to be actively involved in new and established product strategy, concept
development, product formulation, process development, scale-up, and plant
start-ups in the consumer food industry. This position requires a Ph.D.
Degree or equivalent in Food Science or related field, plus two (2) years of
experience in Food Science or a related field. Experience must include one
(1) year of experience with all of the following: (1) Ingredient
functionality research, including technical knowledge of food processing,
process optimization & its relationship in controlling a final product’s
key attributes; (2) Identifying novel applications for food ingredients in
order to enhance the formulation and processing flexibility of food products;
(3) Knowledge of nutrition, macro – and – micro nutrients, and health related
ingredients in products; (4) Designing and developing new food products from
concept to great tasting finished products involving: understanding consumer
needs, financial implications, prototype development, technical
specifications, regulatory and consumer food labeling requirements, and
scale-up; and (5) Working with internationally based, cross functional teams
including Marketing, Operations, and Quality Assurance. Position requires
limited U.S. and international travel (approx. 20% of time). All experience
may be gained concurrently and may have been gained before, during or after
