Job Description
The department of Food Science and Human Nutrition (FSHN) is seeking an
instructor for the food science course, FSHN 403, (Food Laws, Regulations,
and The Regulatory Process) for 2 credits and the distance version (403XW)
for 2 credits. The instructor will be100% responsible for teaching 40 to 50
students. Term October 15 to December 19, 2008 for course development and
spring summer semesters 2009 (Jan. 12-August 7, 2009) for course
implementation and instruction.
Incumbent must be a highly motivated individual with high standards for
excellence in teaching food science principles to undergraduate students.
Excellent skills in classroom teaching techniques and a basic understanding
of good pedagogy are required. Must possess excellent interpersonal
communication skills for interaction with students, faculty and staff.
Term appointment through August 7, 2009.
Required Qualifications
A Ph.D. degree in a discipline related to food science, or political/social
science with demonstrated knowledge of U.S.
food laws, regulations, U.S.
legislative process, regulatory agencies and food policy. Experience in
teaching (at least 1 semester as college instructor, lecturer, Extension,
teaching assistant, high school, industry trainer) is required.
Demonstrated skills in quality classroom teaching techniques, understanding
of good pedagogy and outcomes assessment. Must be a highly motivated individual
with high standards for excellence in teaching undergraduate students.
Demonstrated experience with technology for distance course instruction.
This level of education is essential for teaching food laws and regulations
to dietetics, food science, culinary science and nutrition students. Must
possess excellent interpersonal communication skills for interaction with
students, faculty and staff.
Preferred Qualifications
Work experience with legal issues related to food, food safety or food
policy. Knowledge of government agencies related to food law. Understanding
of international food trade laws. Previous teaching experience in distance
education.
