Job Description: General Mills, Inc. has an opportunity
for a Research & Development Scientist at our facility in Minneapolis,
Minnesota.
This position is actively involved in new and established product strategy,
concept development, product formulation, process development, scale-up, and
plant start-ups in the consumer food industry with a focus on dairy products.
The position requires a Master’s degree or equivalent in Food Science or
related field and one (1) year of experience in food science or related
field. Experience must include hands-on experience with all of the following:
1) expertise with dairy products, including knowledge of dairy ingredients,
their functionality, nutrition, processing and food safety; 2) significant
knowledge in basic and advanced microbiology methodology (such as plate
counts, pathogen & spoilage organism characterization, molecular
microbiology techniques) to ensure safety and quality of food products; 3)
fermentation applications for the food industry; 4) utilizing sensory
methodology and product development process (such as formulation development,
HACCP plan development, nutrition & cost analysis) to assess food
products; and 5) designing and developing new food products from initial idea
to finished product with specific experience in developing growth strategy,
understanding financial issues, technical specifications and conversion of
ideas to prototypes for great tasting finished food products. Must also have
academic coursework in Industrial Microbiology, Molecular Biology, Food
Safety and Fermentation. All experience may be gained concurrently and may
have been gained before, during or after completion of the Master’s degree
