R & D Food Scientist – Emeryville, CA

Position Summary:

The Food Scientist is accountable for supporting and facilitating the process of product development and enhancement by researching ingredients and processes, developing and specifying proprietary product formulas, leading through innovation projects, and supporting the commercialization process.  The jobholder is responsible for formula and process creation for new and existing products, finished product specification development and assisting brand marketing and other Clif Bar departments to ensure high quality products.

Principal Accountabilities:

§  Drive the development of great products from conception into commercialization.  Research novel new processes and apply to the creation of new products.  Collaborate with R&D team members to deliver best tasting products.

§  Research and help source ingredients for new products and enhancements to existing products.  Perform analytical, sensory and practical tests, and assess different interactions of ingredients to determine best options, while working closely with other departments

§  Apply intuitive and learned culinary knowledge to the product development process, craft experimental designs, and specify and maintain product formulas based on stated project objectives, ingredient specifications, sensory tests, and consumer panel feedback

§  Collaborate with the bakeries to develop and test formulas and processes that will replicate product development results once in production.  Make technical decisions and maintain related information.  Prepare related reports and analyses of risks, opportunities, results and costs.

§  Develop finished product specifications for new products, with consideration for special requirements in which Clif Bar distributes or plans to distribute its products.  Prepare, edit and proof final product wrapper information, working with internal partners, covering standard and special product features, nutritional information, ingredients and consumer alerts to potential risks.

§  Once products are moved into production, work with technical services and Food Safety and Integrity to insure ongoing performance of the products at co-packers. 

 

Job Difficulty:

The jobholder applies knowledge of food science, culinary practices, food product manufacturing processes, and ingredient characteristics with practical experience to the development and improvement of new and current products to meet consumer preferences, Clif Bar’s product objectives, and FDA nutrition guidelines and labeling requirements. The incumbent works closely with a variety of Clif Bar departments to assess product requirements and expectations, coordinate accurate internal and external communication of product features, and control potential labeling liabilities.

Education and Experience:

Degree (Master’s preferred) in food science or related field and at least 5 years’ experience in food product research, development and manufacturing is required.  Culinary experience and/or culinology education a plus.  Excellent computer skills are required, including in depth knowledge of Microsoft Office and ESHA Genesis or similar software.  Successful performance also requires strong verbal and written communication skills, creativity, research, analysis and judgment abilities and interpersonal skills.  Incumbents must work independently and be able to handle a fluctuating workload with occasional multiple conflicting priorities, while meeting project deadlines.  The ability to perform taste and other sensory tests, such as bite and visual assessments, is an essential function of this position.  This position requires approximately 20% travel to conduct on-site research as required.
