This position reports
directly to the VP of Quality, Innovation, Research and Development under
minimal supervision, and will be responsible for portions of Tampico’s
R&D / Innovation agenda as authorized by the VP of Quality, Innovation,
Research and Develpment . The food scientist will develop flavors and
beverage formulations, manufacturing procedures, and specifications for new
products, product enhancement, quality improvement and cost reduction
projects. Candidate must be capable of handling multiple projects in
a limited time frame while remaining detail-oriented, reliable, and
organized. The candidate must also reflect excellent interpersonal
and written/oral communication skills while demonstrating initiative and
responsiveness in the daily work environment. A solid understanding
of project management is required and the ability to deliver on the
technical aspects of projects including the functions of flavor and beverage
formulation, sensory science, microbiology, nutrition, analytical
chemistry, ingredient evaluation and regulatory. The food scientist
will not only develop and manage part of the Innovation agenda; he/she will
also be performing the bench work, experiments, test and study related to

Finally, the candidate will also provide technical support to Marketing,
Sales, Operations, Quality, and external customers.
Independently conducts research (gathers data, designs, plans and conducts
experiments) on current and new products / raw materials, exploring methods
to improve cost, quality, flavor, color, texture, nutritional value,
convenience and/or physical, chemical, and microbiological composition of
Designs and performs all technical aspects of projects to ensure that all
projects proceed according to plan. Selects appropriate methods, tests and
procedures for testing.
Effectively documents details of experiments: objectives, formulas,
methodology, required equipment, equipment setup, prepares and presents
written reports and proposes / implements next steps.
Organizes and leads projects and results presentations.
Maintains awareness of current technical trends and identifies, develops
and implements experiments to exploit emerging technologies and ingredients
that can be applied to increase profitability and quality.
Develops products and flavors including plant scale-ups and establishes
manufacturing processes and procedures.
Creates new products containing flavors in a wide variety of food and
Leads organoleptic evaluation for all assigned projects.
Develops and writes experimental formulas, manufacturing procedures, and
specifications for raw ingredients, and finished products, nutritional
sheets, allergen information and sources ingredients.
Interacts with purchasing for costing, new, alternatives and/or replacement
ingredients, resolves issues with ingredient specifications and addresses
ingredient functionality problems
Collaborates with Manufacturing and Quality to provide technical expertise
and support to address quality and production issues and improve product
Leverages supplier resources. Collaborates with supplier on assigned
projects as needed.
Creates prototypes and experimental methods to approve potential
ingredients and suppliers. Identifies, approves and writes specifications
for new ingredients.
Provides judgment and experience to assure that an appropriate level of
technical common sense and discipline are being employed and utilized in
Manages multiple projects simultaneously, ensuring timely completion of
project objectives in a fast-paced, priority shifting environment.
Maintains all developmental records in an orderly, comprehensive manner.
Ensures products meet regulatory requirement and are safe, through proper
formulation, shelf life testing and collaboration with the Regulatory
Bachelors Degree in Chemistry, Biology, Micro Biology, Food Science or
other related discipline Required.
Masters Degree in Food Science preferred
10+ experience in a R&D / Innovation role with a flavor / beverage
company, along with strong technical expertise in flavor chemistry,
composition and functionality, coupled with knowledge of beverage
manufacturing is required
Leadership skills and proactive attitudes in approaching technical
Ability to communicate well and to effectively influence and interact with
others to accomplish research goals.
Ability to interact with customers and manage relationship.
Ability to independently develop products from idea to commercialization
