Food Technologist (Bakery Science)-12001289 Chicago, IL


A Bakery Technologist is a professional in product development responsible for executing projects in the area of baking formulation and process development. A successful individual will play a technical role on various innovation and renovation for complex technical projects. Position works closely with other members of the product development, packaging development, enabling applications, regulatory and labeling groups, while developing strong cross-functional relationships throughout the division. This role will provide exposure to the business categories, suppliers and manufacturing network of Nestle Pizza Division.


Primary Responsibilities:

1. Manage product development activities (e.g. bench top and pilot plant development, experimental design test work, evaluate results with team and determine direction, maintain appropriate records of work, etc.) to meet project goals and deadlines.

2. Work closely with marketing, manufacturing, quality, suppliers, and packaging in a team environment to commercialize new product initiatives, line extension, quality improvements, and productivity initiatives.

3. Plan, organize, and conduct pilot and plant trials.

4. Work with Sensory team to execute consumer product guidance tests, sensory analysis,
report results and recommend next steps.

5. Understand, create, implement, and rectify product and process specifications.

6. Develop and implement technical solutions to a wide range of formula and processing challenges.

7. Maintain technical skills and personal development through completion of appropriate training.


' A BS, MS or PhD degree in Bakery Science'

Position may require approximately 25% travel

' Prefer 1 or more years of product development experience in food industry or related field

' Solid understanding of chemistry of food products, analytical testing, formulations and processing used in food manufacturing

' Firm understanding of the product development process including pilot plant development, consumer testing, factory scale-up and commercialization

' Strong analytical and problem solving skills, technical competence and initiative

' Ability to manage multiple projects while meeting deadlines

' Highly motivated and goal oriented

' Good oral and written communication skills, communicate and work effectively with cross functional team members and management

' Must be a team player and possess good interpersonal skills

' Ability to work with suppliers to deliver technical solutions

' Understanding of food manufacturing processes and plant capabilities

' Basic understanding of interrelationships of product, process and package

' Knowledgeable of and follows Food GMPs and Safety procedures.
