Principal Food Scientist
Job Summary
Lead the elements (recipe, process, pack, specs, and nutrition) for spreads
portfolio for the North America region either as technical project leader
(TPL) for less complex projects or work stream leader (WSL) within large,
complex and challenging projects. Works in partnership with the business
(typically marketing) project leader or TPL if acts as WSL .Oversees
deployment of the projects into the relevant factory or a third party
co-packer
Duties and Responsibilities
General:
• Plans, designs, and performs experiments within the projects and analyses
the data
• Generates technical solutions and recommendations
• Is accountable for ensuring developed product safety and quality by:
o Developing the correct allergen and traceability protocols are developed,
reviewed, tested and accepted by microbiology, TIM-E and TIM-Q.
o establishing right quality control parameters/procedures and dHACCP for developed products
o micro clearance and SEAC evaluation
o establishing right ingredients/product
specifications
• Accountable for delivery all technical aspects from Idea phase through
Post Launch and must communicate effectively to Regulatory, Culinary Chefs,
PTG team, Packaging and TM partners.
As Technical Project Leader (TPLJ
• Manage and deliver the Spreads R&D technical initiatives by
identifying resources needs (personnel and bought in costs), developing
timeline, actions and milestones and ensuring the project is OTIF
throughout the funnel.
• Will lead the technical discussion and represent the technical views for
the technical project team, which includes Product and Process Development,
Culinary Design, Packaging, Nutrition, Microbiology, Analytical and CTI.
• Will be the Technical interface at Innovation Planning Team meetings and
must coordinate R&D sub team meetings to ensure communication
throughout the funnel.
• Responsible for developing the Technical project brief with Marketing and
CMI ensuring technical briefs and Inoplan
documents are clear, concise and achievable. Must agree with launch dates,
raw material targets, both ingredient and packaging and claims.
As Work Stream Leader ( WSL).
• Agree with the TPL on technical deliveries for the project/s
• Develops product/process against the Product Brief including formula
generation (and compliance to all Unilever requirements), process setting,
and specification generation
• Works with TPL on all other technical aspects of the project (as above),
generates and provides data for decision making.
Key Requirements
Bachelors in Food Science with 3-5 years experience
or Masters in Food Science with 3 year experience. Project management
experience. Cross-Category development experience – design & deploy
experiences. Supply Chain experience/awareness and knowledge/experience in
spreads business preferred.
