Brief Description

We are currently seeking a Food Safety Manager to join the Dunkin' Brands team!

Purpose of Position

To maintain industry leading proactive food safety management systems, processes and procedures that protect Dunkin’ Brands guests, Franchisees and brands. Support Restaurant Operations & Corporate partners with food safety and crisis events. Maintain systems that support continuous improvement while assuring design for food safety within operations, equipment, processes and procedures..

Detailed Description

The primary accountabilities for this position include:


1. Act as the primary liaison to the Consumer Care team. Provide support and resolution for restaurant food safety related questions, complaints and incidents.

§ Support the Major Incident Team as necessary

2. Analyze and assess food safety risk and apply measures and controls to mitigate risks to an acceptable level.

§ Contribute to the design of new products, restaurant layouts, equipment, processes and procedures with risk assessments, establishing food safety requirements and review and approval processes.

§ Provide regulatory guidance and support for retail & promotional merchandise.

3. Measure, analyze and report restaurant compliance to food safety systems standards through audit and inspections; directly or by operations teams.

§ Support and maintain operations assessment tools

§ Support improvement, corrective and preventative actions with operations teams.

4. Identify and maintain 3rd Party relationships and support providers, inclusive of identification, capability assessment, qualifications, performance measurement and calibration to Dunkin’ Brands standards and requirements.

Provide technical and subject matter expertise as required

5. Regularly contribute food safety related articles and material to Brand publications.

6. Provide, review and maintain all food safety content in training materials, videos, courses, and brand standards documentation.

§ Conduct regional educational sessions as required.

Establish & maintain relationships with local & state health departments

  4. Participate in the evaluation of the project by giving input for post-project evaluations and lessons learned.

Project Manager

  1. Primary responsibility for the planning, execution and evaluation of the project.
  2. Select, direct and provide coaching and feedback to the project team.
  3. Monitor and report project status to the team, sponsors and leadership.
  4. Utilize project management tools and disciplines to execute project processes, including: risk management, issues resolution, change management, quality assurance, and document management.
  5. Ensure project deliverables are completed, with quality, in a timely manner.

The qualifications for this position include, but are not limited to the following:


· Bachelor Degree in Food Science, Culinary, Public Health or related field.

· 5 or more years experience in retail food safety, regulatory, quality assurance, food safety training or related food industry experience

§ Experience in restaurant operations, equipment and design for food safety

§ QSR experience preferred

· Nationally Recognized Food Protection Manager Certification (i.e. ServSafe, Prometric, National Registry of Food Safety Professionals)

§ Certified Professional – Food Safety (CP-FS) credential preferred

Working knowledge of Hazard Analysis of Critical Control Points, (HACCP), Good Manufacturing Practices, (GMP’s), Food and Drug Administration, (FDA) Model Food Code, Code of Federal Regulations, (CFR), and general microbiology.

Physical Demands / Working Conditions


· Will require regular travel (US and possibly overseas) with overnight stays and extended durations involving weekends and/or requiring airplane travel.

§ Short notice travel may be required

· Will require ability to provide support and guidance to restaurants and operations teams after hours and on weekends.

· Must be able to lift 50 lbs of materials for lab analysis or performance testing.

· Frequent and regular computer work on a daily basis, minimum of 2 hours per day.

· Ability to crawl under machinery, climb heights and fit into space restricted areas.

Lab work requiring use of technical instruments and repetitive measurements.
