The Quality Assurance & Food Safety
Specialist assists with the planning, establishing, implementing
and maintaining a variety of food safety programs to assure the food
safety at Buffalo Wild Wings restaurants and compliance of suppliers to
Buffalo Wild Wings quality assurance.
CORE JOB FUNCTIONS/RESPONSIBILITIES:
- Assist with authoring,
implementing and maintaining restaurant food safety standards.
- Reviews and evaluates
restaurant inspection reports; follow up on corrective actions.
- Develop and/or participate
in programs with FDA, USDA, state and local Health Departments to
allow BWW to better meet regulatory food safety requirements.
- Develop programs to track,
document, and respond to potential food borne illnesses.
- Participate in the Vendor
Management Program for BWW suppliers by inspection, audit and/or
approval of distribution, and food and packaging supplier facilities
and systems, as requested.
- Help ensure that new
products, procedures, equipment and/or supplies meet appropriate
food safety and quality criteria.
- Perform periodic quality
checks on key products.
- Work closely with R&D
and Purchasing departments during new product development.
- Assist with follow up on
identified product-related quality or food safety issues.
- Maintains current and
accurate records of all relevant communications, audits,
inspections, corrective action plans and effectiveness monitoring.
- Assist with developing
controls for identified hazards and coordinating the implementation
of controls from the results of hazard analysis.
- Assist with the monitoring
of unusual occurrences; prepares action item reports for risk and
cross-functional teams.
- Responsible for helping
achieve a satisfactory working environment between risk and other
departments.
- Assist compiling,
analyzing, interpreting and reporting accident, loss and exposure
statistical data; preparing comprehensive recommendations for
corrective actions to eliminate or minimize potential hazards.
OTHER JOB FUNCTIONS/RESPONSIBILITIES:
- Assist in addressing
identified safety issues
- Assist in developing
education and training materials
- Participate in “Alert Line”
emergency response rotation
- Perform other related
duties, tasks, and projects as assigned
- Travel periodically as
needed

Requirements
|
EDUCATION/EXPERIENCE
Required
- Bachelor’s Degree in Food
Science, Meat Science, Biology or other science education equivalent
- General knowledge regarding
food safety, HACCP and federal, state and local regulations
governing food products and restaurants is required
- Understanding of restaurant
operations and procedures required.
- 1-3 years of work
experience in restaurant industry
- Registered Environmental Health
Specialist/Registered Sanitarian preferred. If currently do not hold
REHS/RS, must be willing to attain within first year.
Preferred
- Certified Food Safety
Professional
- Previous work experience
with safety, food safety, and/or quality assurance
- Quality Assurance
experience within a multi-unit food service organization or in a
food manufacturing capacity
Additional Requirements:
- Understand standards,
concepts, practices, and procedures within the safety, food safety
and quality assurance fields
- Ability to elicit internal
and external support; ability to work under pressure and short time
lines, prioritizing multiple projects with various deadlines
simultaneously, as well as attention to detail with accuracy
- Basic ability to make
appropriate business judgment and recommendations independent of
supervisor
- Skill in time management
and organization with excellent attention to detail
- Demonstrated strong
interpersonal skills. Ability to make clear, concise and convincing
business presentations that will have high level impact with
executive and senior level management
- Excellent verbal and
written communication skills, including technical writing
- Working knowledge of MS
Office Suite: Excel, Word, PowerPoint, and Visio
