Nahed Kotrola
(Director, Ecolab)
Dr. Nahed Kotrola is a recognized food safety leader with over 23 years
of Academic and industry experience in food safety and quality. Currently
she holds a position as Director of Antimicrobial Technical Services
in the Food and Beverage Division at Ecolab. Prior to arriving at Ecolab,
she was Associate Professor at Auburn University, Products Safety and
Quality Peak of Excellence Program. She taught Principles of Food Safety
and Advanced Principles of Food Safety courses for graduate and undergraduate
students. Her research and extension program efforts were specifically
directed to the broad area of Meat and Poultry Processing Technology,
Sanitation, Food Quality and Safety.
She taught several training workshops for food industry entitled "Sanitation
for Food Processing Plant", "Equipment Sanitary Design"
and "Thermal Processing". Prior to Auburn University she held
positions of a Food Scientist & Global Food Safety Leader at FMC
Food Tech; Director of Food Safety, Alcide Corporation and Director
of Fermentation Facility at Kansas State University.
Nahed is a Veterinarian with Master degree in Animal & Dairy science;
Doctorate degree in Poultry Science at Auburn University and Post Doctorate
at Biomass Research Center, University of Arkansas. She has authored
or co-authored 40 refereed journal articles, several book chapters,
symposia proceedings, and numerous abstracts and conference proceedings
and presentations.
She is a member of the Institute of Food Technologists, Poultry Science
Association, American Meat Science Association and International Association
for Food Protection. She also serves on the NCC Technical & Regulatory
committee and AMI Inspection Committee.
